Rib-Eye Steak with Onion-Blue Cheese Sauce: Recipe Review

Coming from Cow Country, Southeast Colorado, I like a good steak. Not having had steak in a while, I decided to purchase some.  I also decided to try yet another Pioneer Woman recipe. Yes, I know, I’ve been creating a ton of her recipes, but I was wonderfully given her entire cook book collection for Christmas and I am super pumped to try them all! However, I was a little timid about doing something different with steak other than grilling it, but I took the plunge and I am glad I did! You’ve got to try Grilled Rib-Eye Steak with Onion-Blue Cheese Sauce!

It was so good…too good! Ree Drummond, you’ve done it again. I noticed that the recipe online is different from the recipe in her book, The Pioneer Woman Cooks: Food From My Frontier. I used the recipe from her book, but I am sure the online version, which I have provided a link to, is also good. My advice, try the one in her book first.

You’ll Need:

4 Rib-Eye Steaks – I purchased only two steaks. I am confident the Hubby and I could eat all four steaks, but you know.

Salt & Pepper

1 Stick of Butter

1 Large Yellow Onion, Sliced – I just used half of an onion since I only had two steaks.

1 Cup Of Heavy Cream – I used a little over half a cup

3 to 4 Teaspoons of Worcestershire Sauce – I ended up putting at least 5 to 6 it really just depends on what tastes good to you.

¾ Cups of Blue Cheese – I ended up putting 5 oz of blue cheese. One, because I can’t see me using the blue cheese again and two, we love cheese.

I also threw in a little fresh Rosemary and Thyme to the bubbling sauce mixture.

First, season the steaks with salt and pepper on both sides and slather butter on each side. Grill the steaks to medium rare, 3 or 4 minutes.  Melt the rest of the butter in a skillet over medium high heat. Sauté onions until brown, than add cream, salt and pepper, and the Worcestershire sauce. Let it bubble, add cheese, take the heat down to a simmer, and keep stirring till cheese melts. At this point, add any extra cream, Worcestershire sauce, Salt and Pepper, or cheese that you would like.

Finally, pour sauce over steaks and enjoy!

It’s a simple recipe that is so good!
